New York’s Dairy Industry Is Gaining National Attention

New York has long been recognized as a dairy leader, but a new $75 million investment is underscoring just how much confidence national brands have in our state’s farmers, producers, and future.

Lactalis USA, part of the world’s largest dairy company, recently announced plans to expand and modernize two of its New York facilities—one in Walton and the other in Buffalo. Together, these two plants process hundreds of millions of pounds of raw milk from local farms each year. This expansion is a clear indicator of where the dairy industry is headed and New York is right at the center of it.

In Walton, a $15 million investment will upgrade the plant’s production lines for cottage cheese and sour cream. The improvements will allow the facility to boost output by 30%, create more than 20 new jobs, and bring in modern technologies that enhance both efficiency and product innovation.


Meanwhile, in Buffalo, Lactalis USA will invest $60 million to expand its capacity for mozzarella, ricotta, and provolone cheeses. The project includes the installation of new energy-efficient equipment and increased production capabilities that are expected to add over 30 new jobs and grow mozzarella and provolone output by 37 million pounds annually.


Combined, the two projects are expected to retain more than 800 existing jobs across both facilities, while creating more than 50 new ones. They also represent a significant commitment to New York’s agricultural economy, which benefits directly when plants like these continue to grow. The facilities source milk from over 230 local dairy farms, which supports rural communities and helps to keep family farms thriving.


While this investment is impressive on its own, it also speaks to a broader trend. More and more, we’re seeing national brands take notice of the quality, consistency, and reliability that New York’s dairy supply chain has to offer. From large-scale processors to niche brands, companies are choosing New York as the place to build, grow, and invest.


And it’s not hard to see why. Dairy is the largest segment of New York’s agricultural industry. The state is fifth in the nation for total milk production and ranks first for both yogurt and cottage cheese. Beyond the numbers, New York’s dairy industry is defined by a deep-rooted tradition of excellence and is driven by farmers and producers who take pride in their work and their communities.
